- 2 medium sweet potatoes, peeled and diced
- 1 pound ground beef (or substitute with ground turkey or plant-based meat)
- 8 ounces pasta (your choice: whole wheat, gluten-free, etc.)
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef or vegetable broth
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Sweet Potatoes: Peel and dice the sweet potatoes into small cubes for even cooking.
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
- Brown the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Sauté the Vegetables: Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes until they are soft. Stir in the minced garlic and cook for an additional minute until fragrant.
- Combine Ingredients: Add the diced sweet potatoes, cooked pasta, oregano, salt, and pepper to the skillet. Pour in the broth and stir well to combine.
- Simmer: Cover the skillet and let it simmer for about 15-20 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking.
- Serve: Once cooked, remove from heat and garnish with fresh parsley if desired. Serve hot and enjoy!
