For the Salmon:
- 2 salmon fillets (about 6 ounces each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon slices (for garnish)

For the Mashed Potatoes:
- 2 pounds Russet or Yukon Gold potatoes
- ½ cup heavy cream or milk
- 4 tablespoons unsalted butter
- Salt and pepper to taste

- Roasted garlic (for flavor)
- Cream cheese or cheddar (for richer mashed potatoes)
- Fresh herbs (for added flavor)
Instructions
Step 1: Prepare the Salmon
- Preheat your oven to 375°F (190°C).
- Drizzle olive oil over the salmon fillets and season generously with salt and pepper.
- Place lemon slices on top of the salmon.
- Bake the salmon on a parchment-lined baking sheet for 15-20 minutes, or until it flakes easily with a fork.
Step 2: Make the Mashed Potatoes
- Peel and chop the potatoes into equal-sized pieces.
- Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until fork-tender (about 15-20 minutes).
- Drain the potatoes and return them to the pot.
- Add butter and heavy cream (or milk) to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Step 3: Serve
- On a plate, create a bed of mashed potatoes.
- Place the baked salmon on top of the mashed potatoes.
- Garnish with fresh herbs and additional lemon slices if desired.
