- 1 lb ground beef (lean)
- 2 medium sweet potatoes, peeled and diced
- 1 medium onion, chopped
- 1 bell pepper, chopped (optional)
- 2 tbsp olive oil or avocado oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Prepare the Ingredients:
- Peel and dice the sweet potatoes.
- Chop the onion and bell pepper (if using).
- Cook the Ground Beef:
- In a large skillet, heat the oil over medium heat.
- Add the chopped onion and sauté until translucent (about 3-5 minutes).
- Add the ground beef, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
- Add Sweet Potatoes and Spices:
- Stir in the diced sweet potatoes, garlic powder, paprika, cumin, salt, and pepper.
- Add a splash of water or broth to help steam the sweet potatoes.
- Cook Until Tender:
- Cover the skillet and let it cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Serve:
- Taste and adjust seasoning as needed. Garnish with fresh herbs and enjoy!
