For the Cake:

- 1 cup (120 g) unsweetened cocoa powder (dark chocolate)
- 2 cups (250 g) all-purpose flour
- 2 cups (400 g) granulated sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup (240 ml) whole milk
- ½ cup (120 ml) vegetable oil
- 2 teaspoons vanilla extract
For the Frosting:
- 1 cup (240 ml) heavy cream
- 8 oz (225 g) dark chocolate, chopped
- 8 oz (225 g) milk chocolate, chopped
- 4 oz (115 g) white chocolate, chopped
- 2 tablespoons powdered sugar (optional, for sweetness)
For Garnish (Optional):
- Chocolate shavings (dark, milk, and white)
- Fresh berries
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Prepare the Cocoa Mixture:
- In a bowl, combine boiling water and cocoa powder. Stir until smooth and set aside to cool slightly.
- Mix Dry Ingredients:
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients:
- Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
- Add Cocoa Mixture:
- Gradually stir in the cooled cocoa mixture until fully incorporated.
- Bake the Cake:
- Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool the Cakes:
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- Make the Frosting:
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark, milk, and white chocolate. Let it sit for a few minutes, then stir until smooth. If desired, add powdered sugar for extra sweetness.
- Assemble the Cake:
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
- Garnish:
- Decorate the cake with chocolate shavings and fresh berries if desired.
