  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240 ml) whole milk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons vanilla extract

For the Frosting:

  • 1 cup (240 ml) heavy cream
  • 8 oz (225 g) dark chocolate, chopped
  • 8 oz (225 g) milk chocolate, chopped
  • 4 oz (115 g) white chocolate, chopped
  • 2 tablespoons powdered sugar (optional, for sweetness)

For Garnish (Optional):

  • Chocolate shavings (dark, milk, and white)
  • Fresh berries

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cocoa Mixture:
    • In a bowl, combine boiling water and cocoa powder. Stir until smooth and set aside to cool slightly.
  3. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. Combine Wet Ingredients:
    • Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  5. Add Cocoa Mixture:
    • Gradually stir in the cooled cocoa mixture until fully incorporated.
  6. Bake the Cake:
    • Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the Cakes:
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. Make the Frosting:
    • In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark, milk, and white chocolate. Let it sit for a few minutes, then stir until smooth. If desired, add powdered sugar for extra sweetness.

    • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
