- 1 cup lump crab meat (cooked)

- 2 tablespoons butter

Instructions
- Prepare the Eggs:
- In a mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
- Cook the Crab:
- In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the lump crab meat and sauté gently for 1-2 minutes until heated through. Remove from the skillet and set aside.
- Make the Omelette:
- In the same skillet, add the remaining tablespoon of butter and let it melt. Pour in the egg mixture, tilting the pan to spread it evenly. Cook for about 2-3 minutes, or until the edges begin to set.
- Add the Filling:
- Once the omelette is mostly set but still slightly runny on top, sprinkle the sautéed crab meat and chopped chives over one half of the omelette.
- Fold and Serve:
- Gently fold the other half of the omelette over the filling. Cook for an additional minute, then slide the omelette onto a plate. Garnish with fresh herbs if desired.
- Enjoy:
- Serve immediately with toast or a side salad for a complete meal.
